Country Lamb (Exohiko) with Kaseri and Feta
- 1 Lamb leg
- 200gr Kaseri cheese
- 150gr Feta cheese
- 2 Onions
- 2 finely cut Garlic cloves
- 4 Phyllo pastry
- 2 tbsp butter
- Salt and freshly grounded pepper
Ask your butcher to remove the bone. Salt and pepper on all sides. Clean the onions and cut into slices.
In the place of the bone put the Feta cheese, which you have crumbled, the onions and Kaseri cheese cut into slices. Sprinkle garlic. Spread the phyllo pastry on a buttered griddle also spreading some butter on each one and place the leg in the middle. Pick up the ends and ‘tie’ them together. Pour the remaining butter.
Bake for 1 hour and 15 minutes, having covered the roll with aluminum foil. For the last 15 minutes remove the foil for the meat to turn brown. Serve in slices.
