Chicken Basque
Chicken Basque with Anthotyros
Ingredients (serves 2)
- 2 Chicken legs
- 1 dry Onion
- 1 red Pepper
- 1 green Pepper
- 2 Tomatoes
- 100gr Anthotyros in cubes
- Olive oil, Salt and pepper
Preparation method
Heat some olive oil in a saucepan. When hot sauté the chicken on both sides for about 5 minutes at high heat. Add the sliced onion and cook for a further 3 minutes. Then add the peppers and cook until they turn soft. Add the tomatoes, after you have peeled them, and cook on high heat for 3 minutes. Add salt and pepper.
If you wish, you can add Anthotyros and let it cook for one more minute or put it uncooked in the sauce.
