Summer salad with Feta
Ingredients (serves 4)
- 1 Lettuce
- 1 small Fennel root
- 3 peeled Tomatoes
- 150gr Feta cheese
- Fresh Basil
- Fresh Thyme
- 2 tbsp Lemon juice
- 3 tbsp Olive oil
- Salt and Pepper
Preparation method
Wash the lettuce, strain and then lay out on the griddle. Wash the fennel and cut in very thin slices. Cut the tomatoes in slices and place all of the above on the lettuce. Add feta cheese, cut into small cubes. Sprinkle with basil.
In a bowl beat the lemon juice with salt and pepper, adding some thyme, if available. Finally, beat the dressing with a fork, adding the olive oil drop-by-drop and then pour over the vegetables.
