Cheese Pie with Soda and Feta Cheese

Ingredients (serves 8)
  • 500gr Phyllo pastry
  • 500gr Feta cheese, in crumbles
  • 300gr Goat’s cheese, in crumbles
  • 300gr Anthotyros cheese, in crumbles
  • 6 eggs
  • 1½ cup fresh Milk
  • 1 cup melted butter
  • ½ glass of soda water
  • Salt and freshly grounded pepper

Preparation method

Mix the three white types of cheese in a bowl, adding salt and pepper. Beat the eggs with fresh Milk and pour half of this mixture in the bowl.

Lay out half of the phyllo pastry on a large griddle leaving the ends protruding. Butter each phyllo well. Spread the cheese mix and level the filling.

Over with the rest of the phyllo and stick then ends, using some water, for the filling not to drop off. Carve the pie on a radius. Mix the rest of the butter with the rest of the egg mixture and pour over the pie. Bake at 200 οC. Halfway through baking, open the oven and pour ½ glass of soda water on the pie.

Preparation time: 25 minutes

Cooking time: 60 minutes
