Chicken
Chicken in lemon marinade and Feta

For marinated lemon:
- 600gr Lemons, in slices
- 300gr Olive oil
- 2 tbsp unrefined Salt

For marinated lemon:
- 2 Chicken filets
- 8 Slices of marinated lemon
- 100gr Feta cheese
- 1 dry Onion, thinly sliced
- Some Olive oil, salt and pepper
Preparation method
For the marinated lemon: Put the lemons in a plastic container. Sprinkle the unrefined salt. Cover and let for 12 hours. Steam cook the lemon slices for 5 minutes and then place the lemons in a glass bowl. Cover with olive oil and stir the contents of the bowl and let marinade for 3 weeks. You may then keep this mix refrigerated for up to 2 months and it is a very aromatic mix, ideal for marinating chicken and fish. You may also cut it into cubes and use in salads.
For the marinated chicken: Use a frying pan and the oil to sauté the chicken. When brown, add the onion and immediately afterwards the lemon and Feta, diced. Cook for 5 minutes.
Cooking time: 25 minutes
